Serve with a crisp garden salad and crusty bread
Yield: Serves 4
Preparation Time: 10 minutes; Cooking Time: 20 minutes
Saute chicken in olive oil on medium heat for 5 minutes turning once. Stir in garlic and saute for 1 minute.
Add tomatoes, zucchini, butternut squash, vinegar, oregano and pepper; cover and reduce heat to low.
Simmer for 10 to 15 minutes or until zucchini is tender.
Serve over hot long grain and wild rice.
