A perfect use for leftover ham

| 4 | sheets | (12 x 18- inches each) heavy duty aluminum foil | |

| 1 | pound | cooked ham, cut into 3/4- inch cubes | |
|
|
|||
| 3 | medium sweet potatoes, cut into bite-size pieces | ||
|
|
|||
| 1/2 | cup | orange juice | |
|
|
|||
| 1/4 | cup | maple syrup | |
|
|
|||
| 1/2 | cup | raisins | |
|
|
|||
| Ground ginger | |||

Preheat oven to 450 degrees F or preheat grill to medium-high.
Divide ham evenly on each sheet of heavy duty foil. Repeat with sweet potatoes.
Combine orange juice, maple syrup, raisins and ginger; pour over ham and vegetables. Bring up sides of foil and double fold. Double fold ends to form a packet, leaving room for heat circulation inside each packet. Repeat to make four packets.
Bake 25 to 30 minutes on cookie sheet in oven or grill 12 to 14 minutes on medium-high in covered grill.
