Moist cookies made with orange juice and bits of orange rind

Yield: 4 dozen cookies

| 1/2 | teaspoon | salt | |
|
|

| 1 | teaspoon | cinnamon | |
|

| 1 | teaspoon | nutmeg | |
|

| 3/4 | cup | butter | |
|
|
|||
| 1 | cup | brown sugar | |
|

| 2 | eggs | ||
|
|
|||
| 1 | tablespoon | grated orange rind | |
|
|
|||
| 2 | tablespoons | orange juice | |
|
|
|||
| 1 | cup | uncooked oats | |
|
|
|||
| 1 | cup | raisins | |
|
|
|||
Heat oven to 375 F. Stir flour together with baking soda, salt, cinnamon and nutmeg; set aside.
In large mixing bowl, cream butter with brown sugar. Add eggs one at a time. Stir in orange rind and orange juice. Gradually blend dry mixture into creamed mixture. Stir in uncooked oats and raisins. Drop by tablespoon onto ungreased cookie sheets.
Bake at 375 F. for 10 - 12 minutes or until golden brown.
