Yield: 8 - 10 servings
Peel and slice cucumbers and remove seeds if desired. In large saucepan, saute cucumbers and onion in butter about 10 minutes. Add flour and stir until blended. Add chicken broth gradually, stirring constantly. Remove from heat. Put mixture in blender and blend until smooth. Return to heat. Add milk and heat to scalding stirring constantly to prevent mixture from scorching. Add cream and heat again. Season to taste with salt and pepper and serve hot.
