Farfalle and Pepperoni with Zucchini Marinade

Yield: 6 servings

Ingredients

1/3 cup olive oil
1/4 cup white vinegar or red wine
1 package (.7 oz.) Italian salad dressing mix
2 cups chopped fresh tomato
2 small zucchini, thinly sliced and cut in half
1 package (12 ounce) farfalle pasta, uncooked
1 package (3 ounce) sliced pepperoni, cut into strips
1/4 cup freshly grated Parmesan cheese (optional)

Directions:

In shallow dish, stir together oil, vinegar and salad dressing mix; stir in tomato and zucchini.

Cook pasta according to package directions; drain.

Toss hot pasta with zucchini mixture and pepperoni. Sprinkle with cheese. Serve hot.
