El Rancho Casserole

Yield: Makes 6 to 8 servings

Ingredients

1 lb. ground beef
1 cup onions, chopped
1 pkg. (7 oz.) elbow macaroni
3 1/2 cups (1 lb. 12 oz.) tomatoes
1 1/2 cups (12 oz.) whole kernel corn, (undrained)
1/2 lb. Velveeta, cubed
1/2 cup water
1 tablespoon chili powder
1 teaspoon salt
1/4 teaspoon pepper

Directions:

In large saucepan, brown ground beef; drain. Add onions and cook until tender. Stir in remaining ingredients. Continue to stir until cheese melts. Cover and simmer, stirring occasionally 30 to 35 minutes.
