Louisiana Chicken and Beans Skillet

Yield: 4 servings

Ingredients

1 medium onion, sliced
1 Tablespoon olive oil
1 can (16 oz) red kidney beans, drained
1 can (14.5 oz) diced tomatoes, undrained
2 teaspoons Cajun seasoning
1 cooked rotisserie chicken, skin and debone, cut chicken into bite size pieces
4 cups cooked rice

Directions:

In a large skillet saute onion in oil for 3 minutes until tender. Add beans, tomatoes and seasoning; bring to a boil. Reduce heat; add chicken.

Cover and simmer 8 to 10 minutes or until chicken is heated through. Serve chicken and beans over hot rice.
