Maple Pecan Oatmeal Bars

For a special dessert, cut bars larger and top with vanilla ice cream

Yield: 32 bars

Preparation Time: 10 minutes; Baking Time: 35 minutes

Ingredients

2 1/4 cups Quaker Oats (quick or old fashioned, uncooked)
2 cups all-purpose flour
1 3/4 cups firmly packed brown sugar, divided
3/4 cup shredded coconut (optional)
1 teaspoon baking soda
1/4 teaspoon salt (optional)
3/4 cup (1 1/2 sticks) butter or margarine, melted, cooled
2/3 cup maple flavored syrup, divided
1 egg, lightly beaten
1 teaspoon vanilla
1 1/2 cups chopped pecans, (about 6 oz.)

Directions:

Heat oven to 350 F. Lightly spray 13x9-inch baking pan with nonstick cooking spray.

In large bowl, combine oats, flour, 1-1/2 cups brown sugar, coconut, baking soda and salt; mix well.

In small bowl, combine melted butter, 1/3 cup syrup, egg and vanilla; mix well. Add to oat mixture; mix well. (Dough will be stiff.) Press dough evenly onto bottom of pan.

In small bowl, combine pecans and remaining 1/4 cup brown sugar. Sprinkle evenly over dough; press down lightly. Drizzle remaining 1/3 cup syrup evenly over pecans.

Bake 35 to 38 minutes or until edges are set but middle is soft. (Do not overbake.) Cool completely in pan on wire rack. Cut into bars. Store tightly covered.
