Grilled Herb Corn

Yield: Serves 6 to 8

Ingredients

1/2 cup butter, softened
3 tablespoons minced fresh parsley
3 tablespoons minced green onion
1 teaspoon minced fresh tarragon or 1/2 teaspoon dried tarragon, crushed
1/2 teaspoon Salt
Freshly ground pepper to taste
6-8 ears corn, husks and silk removed, trimmed

Directions:

In small bowl, blend butter, parsley, green onion and tarragon; add salt and pepper to taste. Spread each corn ear liberally with mixture and wrap individually in heavy duty foil. Grill over coals for 15 to 20 minutes or until tender, turning occasionally.
