No Bake Ricotta Tart

Yield: 8 servings

Ingredients

2 cups whole milk ricotta cheese
2 tablespoons sugar
1 tablespoon honey
1 teaspoon grated lemon zest
1 pint strawberries or raspberries
1 pre-baked pie shell

Directions:

In a food processor or blender beat the ricotta, sugar, honey and lemon zest until smooth. Clean berries and fill the pastry shell with the ricotta cheese mixture and top with the berries. Serve at once.
