Ham and Potato Casserole

Yield: 4-6 servings

Ingredients

1/2 stick butter
1 medium onion, chopped
3 tablespoons chopped green pepper
3 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper
3 cups cooked, cubed ham
4 cups cooked, sliced potatoes
3/4 cup shredded cheddar cheese

Directions:

Melt butter in large skillet over medium high heat. Add onion and green pepper and cook, stirring, for about 5 minutes. Stir in flour, milk, salt and pepper. Cook and stir until mixture thickens. Add ham and potatoes and stir to combine all ingredients. Sprinkle with cheese. Bake at 350 degrees, uncovered, for 25-35 minutes or until cheese is melted and bubbly
