Ham and Pineapple Brunch Casserole

Yield: 6 servings

Ingredients

1 cup biscuit mix
1 cup milk
3 eggs, lightly beaten
1/4 cup melted butter
1 can (8 oz.) crushed pineapple, drained
1 cup diced cooked ham
6 oz. shredded Colby cheese, divided

Directions:

Preheat oven to 350 degrees F. Coat a 2-quart casserole with cooking spray.

In a bowl, beat together biscuit mix, milk, eggs and butter. Stir in pineapple, ham and 1 cup cheese. Pour into prepared casserole and sprinkle with remaining cheese. Bake, uncovered, for 35-40 minutes or until set and lightly browned.
