Mediterranean Rice Salad

Made with Kalamata olives, a type of Greek olive with a rich fruity flavor

Ingredients

11/2 cups Uncle Ben's Converted Brand Rice
2 teaspoons dried basil
1/2 cup red wine vinaigrette, divided
1 can (6 oz.) solid white tuna in water, drained and flaked
1 cup chopped green bell pepper
1 cup chopped tomato
1/2 cup diced red onion
1/2 cup (about 18 to 20) Kalamata or pitted black olives

Directions:

1. Prepare rice according to package directions. Stir basil and about 1/3 cup of vinaigrette into cooked rice.

2. Meanwhile, combine tuna, bell pepper, tomato and red onion in large salad bowl.

3. Add rice mixture to tuna and vegetables in salad bowl. Stir in remaining vinaigrette and olives.
