| 1 | can | (12 oz.) evaporated milk | |

| 1 | teaspoon | salt | |
|

| 1 | teaspoon | pepper | |
|

|||
| 1 | package | (30 oz.) frozen hash brown potatoes, shredded | |

|||
| 1 | package | (8 oz.) cheddar cheese, shredded | |
|

| 1 | medium onion, chopped | ||
|
|
|||
| 1 | small green pepper, chopped | ||
|
|
|||
| 1 | cup | fully cooked ham, diced | |
|
|
|||
Grease a 13 x 9 inch baking dish. Combine eggs, milk, salt and pepper in a large bowl. Add potatoes, cheese, onion, green pepper and ham; mix well. Pour mixture into prepared baking dish. Bake in 350 degree oven for 60-65 minutes or until set.
