Cherry Pound Cake Celebration

Celebrate Presidents' Day or surprise your Valentine with this quick and easy cherry dessert!

Yield: 4 to 6 servings

Ingredients

1/4 cup coconut, toasted*
1 can cherry pie filling (lite or regular)
1 teaspoon almond extract
1/4 cup quick cooking rolled oats, uncooked
2 Tablespoons all purpose flour
2 Tablespoons brown sugar
1/2 teaspoon ground cinnamon
2 Tablespoons butter or margarine, softened
1 loaf pound cake

Directions:

*Toast coconut (see instructions below).

Pour cherry filling into an 8-inch, round microwave-safe dish. Sprinkle with almond extract. Spread mixture evenly in dish.

In a small bowl, combine toasted coconut, oats, flour, brown sugar and cinnamon; mix well.

Cut in butter with a fork until mixture is crumbly. Sprinkle oat mixture over cherry filling.

Microwave, uncovered, on HIGH 6 to 8 minutes (rotating dish twice), or until filling is hot and bubbly.

Cool slightly and serve over sliced pound cake.

*To toast coconut:
Heat oven to 350 F. Spread coconut in a thin layer in shallow baking pan. Bake 5 to 10 minutes, stirring occasionally, until light golden brown.

Store any leftover coconut tightly closed in refrigerator.
