Quick Cherry Crumb Cake

Top it off with a scoop of vanilla ice cream!

Yield: 9 servings

Ingredients

Cherry Streusel Topping:
1/2 cup flour
3 Tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3 Tablespoons butter or margarine, softened
1/4 cup chopped walnuts, optional
Cake:
2 cups buttermilk baking mix
1/2 cup sugar
1 teaspoon grated lemon peel
3/4 cup dairy sour cream
2 Tablespoons butter or margarine, melted
1 egg, beaten
1-1/2 cups Northwest Bing cherries, pitted and halved, Divided
Vanilla ice cream, optional

Directions:

Streusel Topping:
Combine flour, brown sugar, cinnamon and salt. Mix in butter or margarine with a fork. Add walnuts (optional) and mix well. Makes about 1 cup. Set aside.

Cake:
Combine baking mix, sugar and lemon peel. Combine sour cream, melted butter and egg; mix well.

Add sour cream mixture to baking mix mixture and stir only until moistened. Fold in 1/2 cup cherries. Pour into greased and floured 8-inch square baking pan. Sprinkle remaining cherries and Streusel Topping over batter.

Bake at 375 F. for 35 to 40 minutes or until wooden pick inserted near center comes out clean.
