Oatmeal Pancakes

An easy and delicious breakfast to serve Mom in bed on Mother's Day... it's healthy too!

Ingredients

1-1/2 cups all purpose flour
1/2 cup quick or old fashioned oats, uncooked
2 teaspoons baking powder
1-1/4 cups skim milk
1 egg
1 Tablespoon vegetable oil
Optional Stir Ins:
1 cup frozen blueberries
OR 1 medium ripe banana, mashed with 1/8 teaspoon ground nutmeg
OR 3/4 cup chopped apple with 1/2 teaspoon ground cinnamon

3 pancakes without stir-ins or syrup

Directions:

In medium bowl, combine flour, oats, and baking powder; mix well.

In small bowl, combine milk, egg and oil, blend well. Add to the dry ingredients all at once; mix just until dry ingredients are moistened. Add one of the stir-in options, if desired.

Heat skillet over medium-high heat (or preheat electric skillet to 375 degrees F.) Lightly grease skillet. For each pancake, pour 1/4 cup batter into hot skillet. Turn when top of pancake is covered with bubbles and edges just begin to brown.

Serve hot with warm maple syrup.
