Serve with hawaiian pineapple and a glass of skim milk
Yield: Makes 4 sandwiches
1 | can | (6 oz.) tuna, drained | |

3/4 | cup | prepared hummus | |
|
|||
1 | cup | finely shredded spinach leaves | |
|
|||
1 | cup | shredded carrots | |
|
|||
1 | teaspoon | cumin | |
|
|||
|
|||
1/2 | cup | lowfat milk | |
|
|||
1 | egg | ||
|
|||
2 | egg whites | ||
|
|||
|
|||
8 | slices | multi-grain bread | |
|
Combine tuna, hummus, spinach leaves, carrots and cumin and mix until well blended. Set aside.
In separate bowl, combine milk, egg and egg whites together until well blended. Dip each slice of bread into egg-milk mixture until both sides are covered, allow excess egg to drip off.
Grill each side of bread until lightly toasted (about 5 minutes per side). Spread tuna mixture on 4 slices of bread then top with remaining toasted bread.
