Sausage and Pepper Filled Deli Sandwiches
Yield: 6 servings
Ingredients
| 1 1/2 | pounds | sweet Italian sausage | |

| 1 | clove | garlic, chopped | |
|
|
|||
| 2 | red onions, sliced thinly | ||
|
|
|||
| 2 | red peppers, seeded and cut into thin strips | ||
|
|
|||
| 2 | green peppers, seeded and cut into thin strips | ||
|
|
|||
| 3 | tomatoes, chopped | ||
|
|
|||
| 1 | teaspoon | oregano | |
|
|
|||
| Salt to taste | |||
|
|
|||
| Pepper to taste | |||
|
|
|||
| 6 | deli sandwich rolls | ||
|
|
|||
Directions:
Slice sausages in 1/2- inch thick crosswise slices. Fry sausage in a skillet until brown and cooked; remove from skillet.
Add garlic, onions and peppers to pan drippings. Saute for 5 to 6 minutes or until vegetables are tender, but still crisp. Add tomatoes and oregano and simmer 3 to 4 minutes until tomatoes are warm. Season to taste with salt and pepper. Fill deli rolls with sausage filling. Serve at once.
