| 1 | small clove garlic, minced | ||

| 1 | can | (6 ounces) V-8 Low Sodium Cocktail Vegetable Juice | |

| 1/3 | cup | regular long-grain rice | |
|
|
|||
| 1 | small green pepper, cut into strips | ||

Directions:
1. In 1-quart saucepan over medium heat, in hot butter, cook onion with garlic until onion is tender. 2. Stir in V-8 Juice, rice and green pepper. Heat to boiling. 3. Reduce heat to low; cover. Simmer 25 minutes or until rice is tender and liquid is absorbed, stirring often.
