Pumpkin Date Cookies
A delicious lunch box treat or after school snack!
Yield: 4 dozen
Ingredients
| 1 1/2 | cups | whole wheat flour | |

| 2 | teaspoons | baking powder | |
|
|
|||
| 1/2 | teaspoon | baking soda | |
|
|
|||
| 1/2 | teaspoon | salt | |
|
|
|||
| 1 | teaspoon | cinnamon | |
|
|
|||
| 1/2 | teaspoon | nutmeg | |
|
|
|||
| 1/8 | teaspoon | ground cloves | |
|
|
|||
| 2/3 | cup | butter or margarine, softened | |
|
|
|||
| 1/2 | cup | granulated sugar | |
|
|
|||
| 1/2 | cup | brown sugar | |
|
|
|||
| 2 | eggs | ||
|
|
|||
| 1 1/4 | cups | (15 ounce can) solid pack pumpkin or cooked pumpkin | |
|
|
|||
| 1 | teaspoon | vanilla extract | |
|
|
|||
| 1 | cup | chopped dates | |
|
|
|||
| 1 | cup | rolled oats | |
|
|
|||
| 1/2 | cup | chopped nuts | |
|
|
|||
Directions:
Preheat oven to 375 degrees F
In mixing bowl, stir together flour, baking powder, soda, salt, cinnamon, nutmeg, and cloves until well blended. Set aside.
Cream butter and sugars in large mixing bowl. Add eggs; beat well. Stir in pumpkin and vanilla. Blend in flour mixture; stir thoroughly. Add dates, oats and nuts; mix well.
Drop by teaspoonfuls onto parchment paper lined baking sheet.
Bake for 12 minutes. Remove to rack to cool.
