Pecan Chicken
Yield: 4 servings
Ingredients
| 1/3 | cup | pecans, coarsely chopped | |

| 1/3 | cup | dried bread crumbs | |
|
|
|||
| 1/2 | teaspoon | dried thyme | |
|
|
|||
| 1/2 | teaspoon | paprika | |
|
|
|||
| 1/2 | teaspoon | salt | |
|
|
|||
| 4 | boneless chicken breast halves | ||
|
|
|||
| 3 | tablespoons | Dijon mustard | |
|
|
|||
Directions:
In a shallow bowl, combine the pecans, bread crumbs, thyme, paprika and salt. Coat chicken with mustard, then with pecan mixture. Place in a greased 13x9 inch baking pan. Bake, uncovered, at 375 degrees for 30-35 minutes or until chicken juices run clear.
