Barbecued Rotisserie Pita Pockets
A quick lunch recipe featuring a tasty barbecue rotisserie chicken salad in a pita pocket for a delicious meal on the go.

Ingredients
| 2 | cups | rotisserie chicken from the deli, diced | |

| 1 | tomato, diced | ||
|
|
|||
| 1/4 | cup | diced celery | |
|
|
|||
| 1/2 | cup | canned corn with peppers, drained | |
|
|
|||
| 1/2 | cup | diced pepper Jack cheese | |
|
|
|||
| 1 | avocado, diced | ||
|
|
|||
| 1 | green onion, minced | ||
|
|
|||
| 4 | Tablespoons | mayonnaise | |
|
|
|||
| 2 | Tablespoons | hickory smoked barbecue sauce | |
|
|
|||
| 1 | teaspoon | lime juice | |
|
|
|||
| 6 | pita pockets, halved | ||
|
|
|||
| Shredded lettuce | |||
|
|
|||
Directions:
In a large bowl combine the chicken, tomato, celery, corn with peppers, cheese, avocado and green onion.
In a small bowl mix together the mayonnaise, barbecue sauce and lime juice until well blended; toss with the salad to evenly coat.
Divide mixture equally among the pita halves.
Garnish each pocket with shredded lettuce.
