Tropical Turkey Salad

Yield: 6 servings



Combine turkey, mango and toasted pecans* in a large bowl.

In a small bowl, blend mayonnaise, lime juice, poppy seeds, salt and pepper; pour over turkey mixture; toss.

Arrange greens on plates. Spoon turkey salad over greens. Serve immediately or chill before serving.

*To toast pecans:
Spread pecans in a single layer on a baking sheet and toast in a preheated 400 degree F oven until pecans are deeply golden, about 4 minutes.
