Ham and Pineapple Brunch Casserole
Yield: 6 servings
Ingredients
| 1 | cup | biscuit mix | |

| 1 | cup | milk | |
|
|
|||
| 3 | eggs, lightly beaten | ||
|
|
|||
| 1/4 | cup | melted butter | |
|
|
|||
| 1 | can | (8 oz.) crushed pineapple, drained | |
|
|
|||
| 1 | cup | diced cooked ham | |
|
|
|||
| 6 | oz. | shredded Colby cheese, divided | |
|
|
|||
Directions:
Preheat oven to 350 degrees F. Coat a 2-quart casserole with cooking spray.
In a bowl, beat together biscuit mix, milk, eggs and butter. Stir in pineapple, ham and 1 cup cheese. Pour into prepared casserole and sprinkle with remaining cheese. Bake, uncovered, for 35-40 minutes or until set and lightly browned.
