Chop the apple into small chunks and sprinkle with 2 Tablespoons apple juice to prevent browning.
Place 1-1/2 cups apple juice into a heavy bottomed sauce pan and add the vanilla extract, cinnamon, salt and orange peel. Bring mixture to a boil.
Stir in the bulgur, then cover the pan and reduce the heat to medium low. Simmer the bulgur for approximately 15 minutes, or until the liquid is absorbed. Mix in apple chunks, dried cranberries and peanuts.
